Retort Cake

Prepare raw materials: Choose long-grain glutinous rice for good viscosity, and round-grain taste is more sweet; choose kidney beans according to personal preference, choose flower kidney beans or red kidney beans, soak kidney beans in cold water for more than 12 hours. Kidney beans must be soaked thoroughly or it will be difficult to steam.

Soak glutinous rice for more than 6 hours, wash the jujube, choose the sweet jujube, and pickled candied dates are the best

If it’s dried dates, put them on a pot and steam for 10 minutes, then remove the jujubes from the steamed dates.

Find a deeper container and spread a layer of glutinous rice, which can be thicker, and then spread the steamed jujube evenly

Spread the glutinous rice a second time, be sure to cover the dates and spread a layer of kidney beans

Spread the last layer of glutinous rice, spread all the remaining glutinous rice, make it thicker, and spread the remaining jujube on the top layer

Add a proper amount of water until the jujube on the top side will be covered. Tilt the container slightly to see the water, but not to see the water. Cover with plastic wrap, put it in an electric pressure cooker, and adjust the time to the longest one. Complete the procedure, and then steam for half the longest procedure. It will take a longer time to fully steam. The authentic Zeng cake is steamed overnight.
Tips:
1. From bottom to top, it looks like this: 40% glutinous rice, 50% jujube, 20% glutinous rice, 100% kidney bean, 40% glutinous rice, 50% jujube;
2. The specific ratio does not need to be so accurate, only ensure that the bottom and top two layers of glutinous rice are thicker.
