Rice Candy

Right amount of leftover rice

Prepare some cooked peanuts and cooked black sesame seeds. You can also add some melon seeds and walnuts. (The peanuts and sesame seeds I have fried two days ago are fried and placed in a bag with a rolling pin.)

Spread the leftover rice to dry for a day

Add appropriate amount of corn starch after drying

Knead it with your hands to form grains of rice, (if you don’t put starch, let the leftover rice dry for two more days to form individual grains of rice)

The oil is heated to 40-50% hot, just throw a few grains of rice and it can float immediately.

Pour in all the rice grains and fry until the rice grains float up

Fry until golden brown and remove

Fish out and put in a basin

Pour in chopped peanuts and black sesame seeds and mix well

Add the right amount of sugar and maltose (the ratio of white sugar to maltose is 2:1). If there are more raw materials, pour more sugar and maltose.

Add some water and just start to melt the sugar on high heat, then turn to low heat and simmer slowly

Simmer until the sugar is almost sesame oil color.

To judge whether the sugar is boiled well, simply put some cold water in a bowl, scoop some syrup in the water with a spoon, wait a few seconds to pick it up and taste the sugar is crunchy and it proves to be simmered.

Pour all the rice flowers in and stir fry quickly evenly

Then pour it into a greased mold and flatten it

After a while, you can use a knife to cut into pieces, or pour out the rice candy and cut into pieces.
