Rice Eel in Clay Pot

Pour an appropriate amount of water into the pot to boil, put the cleaned rice eel in, blanch for three minutes, pick up and clean it.

Cut ginger, shallots, coriander, garlic sprouts, red peppers, onions, and carrots into shapes you like

Mix oyster sauce, black pepper, sugar, hoisin sauce and water into a sauce

Pour the fried rice eel into a casserole and cover, cook on medium heat for 25 minutes, turn off the heat, and sprinkle with coriander.
Tips:
1. It is best to ask the stall to help the rice field eel;
2. The amount of sauce can be adjusted according to your own preference;
3. Because it needs to be covered and boiled, it is best to mix more sauces to prevent it from being boiled.
