Rice Osmanthus Cake

Prepare 200g rice and soak it in clean water overnight.

After the noodles are soaked, rinse them twice with clean water. Do not rub them with your hands. Drain the water after rinsing. Then add 200g of osmanthus fermented rice and mix it evenly with chopsticks.

Put the mixed rice and fermented rice into a food processor, grind them into a paste, then add white sugar and dry yeast, and then use chopsticks to mix them evenly.

After the rice batter is mixed, cover it with plastic wrap and spread the batter to twice its original size. Now it takes about 40 minutes to make the batter.

After the rice paste is made, stir it with chopsticks continuously to expel the air in the rice paste, so that the normal rice osmanthus cake tastes more delicate.

Prepare a round mold, or a deeper bowl, put tin foil on it, then pour the batter into the tin foil, then put the mold into the steamer, cover the pot and let it cook for about 10 minutes, then add the rice paste Sprinkle some dried sweet-scented osmanthus on the surface. If there is no sweet-scented osmanthus, you can also put some raisins, and then you can start the fire. Steam for 30 minutes after airing. When steaming, buckle upside down in a dish to prevent the rice paste from entering water and affecting its shape.

After the rice osmanthus cake is steamed, let it cool slightly, and then cut into small pieces before eating. When cutting, you can put a little oil on the knife, otherwise the rice osmanthus cake will be a little sticky and not convenient to cut.
