Roasted Pork Ribs with Potatoes

Ginger, green onions, a little cooking wine, washed ribs, boil them in cold water until boiling, remove the ribs, rinse with cold water, drain, and set aside.

7 star anises, 6 scallions, 2 grass fruits, 1 cinnamon, 4 cassia sticks, 1 leaf, Chinese pepper, dried sea pepper, put them in a pile for later use.

Boil the oil until it smokes, turn off the heat, add a small spoonful of Pixian bean paste, a small piece of ginger, and three garlics, and stir-fry for 2 minutes evenly.

Add the spare ribs and stir-fry evenly for 5 minutes.

After stir-frying evenly, add 1 liter of boiling water, and at the same time add the pile of spices prepared before, then add a little cooking wine and soy sauce. After stirring, cover the lid and cook for about half an hour.

Peel the potatoes and cut them into small pieces, soak them in cold water to prevent them from sticking.

Just add potatoes to the ribs that have been simmered for half an hour, then add boiling water to just submerge the potatoes, cover and simmer for 15 minutes.

After simmering for 15 minutes, remove the lid and collect the juice on high heat. If the juice is too dry, it is best to save some of the soup, turn off the heat, add a little MSG, stir-fry both, and serve.

Sprinkle chopped green onions and you're done!
