Roasted Red Amaranth with Garlic

Prepare amaranth, garlic cloves, lean pork

Soak the shredded pork in bleeding water and wash it, then marinate it for half an hour with a proper amount of cooking wine

Remove the roots of the amaranth, pick the tender heads, soak the rice water for 10 minutes, rinse with running water and drain

Heat oil in a pan, sauté garlic cloves, add shredded pork and stir-fry. The shredded pork will change color

Add the amaranth and stir-fry quickly. The amaranth will have moisture, so you don’t need to add water (if there is not enough water in the pot, you can sprinkle it appropriately)

The amaranth becomes soft, add some salt and a little chicken essence, and continue to stir-fry for about half a minute.
7.
Serve on a plate
