Rouge Lotus Root

Wash the red amaranth.

Add water to the pot, put the amaranth to cook the red soup.

Wash the lotus root and peel it off.
4.
Cut thin slices.

Add water to the pot and cook the lotus root slices.

Take it out and soak it in cold water.
7.
Add salt, sugar, and white vinegar to the red amaranth water, mix well, soak the lotus root slices until they are colored (put it in the refrigerator). I used it for about 2 hours.
