Rouge Lotus Root

Prepare all the ingredients.

Peel the lotus root and slice it.
3.
Use a mold to carve the edge of the lotus root into a V shape.
4.
Round the corners into a flower shape.
5.
Blanch the lotus root and set aside.
6.
Blanch the amaranth slightly.
7.
Squeeze the amaranth juice by hand, pour it into the sliced lotus root, add sugar, white vinegar, and salt to mix well.
8.
Soak for about 1 hour and then put it on the plate.
Tips:
The juice squeezed out from cooking amaranth for too long is not so bright.
