Rouge Lotus Root Slices

Wash the purple cabbage and break it into small pieces.

Add a little cold water to the food processor to make a juice.

Filter out the residue for later use.

Squeeze a few drops of lemon juice, and the purple instantly turned pink.

Wash the lotus root and peel it.
6.
Cut into thin slices and rinse with clean water.
7.
Boil in a pot of water for two minutes to remove.

After the lotus root slices are cool, put them in a bowl of purple cabbage juice, put three slices of lemon in, add sugar and white vinegar, put them in the refrigerator for two hours before serving.
