Rural Pineapple Fried Rice

Prepare the ingredients, cut fresh pineapple into evenly sized cubes and immerse them in light salt water

Sweet corn kernels are blanched in boiling water

Red pepper, ham, carrot, cucumber are all cut into small cubes

Heat vegetable oil in a pot. When it is 80% hot, pour in beaten eggs, fry them into broken eggs, set aside

Leave the bottom oil in the pot, add the rice and fry for about two or three minutes after it is hot

Add the diced carrots and fry for a while

Then add red pepper, sweet corn kernels, ham, cucumber, cooked peanuts, chopped egg, a little light soy sauce and salt

Stir-fry and stir well, finally add diced pineapple to the pot and stir-fry a few times.
