Salt and Pepper Duck

Wash duck legs and cut into pieces

Remove the fishy seasoning star anise for duck legs, cut green onion into sections, slice ginger, and a short section of cinnamon (you can put a dozen peppercorns)

Put clean water in the pot, put in the sliced duck pieces, add scallion ginger, star anise, cinnamon, cooking wine and other seasonings

After the fire is boiled, skim the froth, and simmer for 20 minutes.

Remove the boiled duck pieces, control the moisture, add five-spice powder, light soy sauce, and appropriate amount of salt to marinate for 10 minutes.

Add two spoons of five-spice fried chicken powder and two spoons of flour to the marinated duck pieces

Mix well again, so that each piece of duck is covered with a thin layer of powder

The oil in the pot is 60% hot, add the duck cubes mixed with flour and fry on medium heat

Deep-fry the golden and crispy skin, remove the oil control, and sprinkle with salt and pepper according to your own taste.
