Clean the quail eggs

Drain the quail eggs

Put the coarse salt, star anise, Chinese pepper, and bay leaves into the pot and fry them to get a fragrance. You can see that the coarse salt has slightly yellowed. Preheat the oven to 200 degrees

Spread one-third of the salt on the baking sheet

Spread the quail eggs on top of the salt

Then cover the remaining coarse salt on top of the quail eggs, as much as possible
