Salted Egg Yolk Potato Meatballs

Prepare the ingredients (only two egg yolks)

Press the potatoes into a puree with a spoon, add sugar and mix well, mix well with 15 grams of starch in the house. The other five grams of starch are used to wrap the potato balls

Divide the mashed potatoes into ten grams, roll them round to make small balls, put them in a starch bowl and turn them around to make a layer of starch stick on the skin. Do it all in turn.

Bring the oil to 40% hot, add the prepared potato balls, and fry on medium-low heat until the surface is golden, remove the oil control

Leave the bottom oil in the pan, crush the egg yolk, and stir-fry in the pan until bubbles are formed

Add the fried meatballs and stir well out of the pan.
