Sanxian Hand-made Soba Noodles

Mix white flour and buckwheat flour in a ratio of 1:1.

Add water and use chopsticks to stir the flour into gnocchi.

Knead the gnocchi into a ball and let it on for twenty minutes.

Put the good dough on the chopping board, roll it into thin slices, sprinkle it with dry flour, and layer it up.

Dehull the shrimp and remove the shrimp thread, pick and wash the squid, cut into small sections, and cut the pork tenderloin into thin strips. Add salt, cooking wine and starch separately and mix well.

Tips:
1. Use buckwheat noodles to make the noodles. Make the noodles harder so that the noodles can be cut finely.
