Saqima
1.
Knead the flour with eggs and then wake up for half an hour
2.
After waking up, press it into a noodle that is slightly thicker than usual noodles.
3.
Cut into dough pieces about the size of wonton wrappers
4.
Then cut into small strips and sprinkle more flour to prevent sticking
5.
Heat the frying pan, sift the noodles to shake off the excess flour before frying, and fry them until golden brown to remove the oil control
6.
Add sugar to a little water and bring to a boil
7.
Then add honey, maltose and butter
8.
Cook on high heat until there is big bubbling and turn off the heat. Pour into the previously fried noodles and stir quickly so that each noodle is covered with syrup
9.
Put some butter on the mold in advance and sprinkle with white sesame seeds. I forgot to take the photo, then pour the noodles covered with syrup into the mold and quickly flatten it with a spoon, or use a rolling pin.
10.
Sprinkle your favorite preserved fruit on the surface, and it can be demoulded after it has cooled down completely.
Tips:
1. How many eggs you put depends on your own flour and individual eggs, the eggs I bought are small
2. Don't make the dough too hard, or it won't be soft if it's fried out, so the noodles must be sober.
3. If you like sweetness, you can replace the maltose with honey
4. When the syrup is poured into the fried noodles, stir it quickly, because the syrup solidifies too fast, which makes it difficult to operate the next step.
5. Do not press too hard when pressing the noodles after pouring into the mold, so as not to damage the softness of the noodles
