Sauce Beef Tendon

Main ingredients: beef tendon

Soak the beef tendon in clean water for several hours (change the water in between)

Prepare sauces: old soup, yellow sauce, star anise, cloves, cinnamon, grass fruit, bay leaf, angelica, grass, tangerine peel, green onion and ginger

Cut the green onion into large pieces, cut the ginger into large pieces (or smash it with a knife) yellow sauce with a little water to adjust kai

Put cloves, tangerine peel, star anise, bay leaves and other small materials into the seasoning bag.

Put clean water in the pot, put the soaked beef tendon meat, boil on high heat, and skim the foam.

Remove the scum on the beef and wash it with warm water

Wash the foamed beef tendon into the pot, add the old soup, seasoning bag and all seasonings

Add ingredients, soy sauce or dark soy sauce

Add the mixed yellow sauce

Bring to a boil on high heat, press a clean plate on top of the beef, keep the beef soaked in the soup, and simmer on a low fire.

Simmer for about 40 minutes, add salt, and continue to simmer for about 1 hour.

Chopsticks for stewing can easily pierce through but with slight resistance to turn off the heat. Don't rush the cooked beef out of the pot, soak it in the soup for 24 hours to make it more flavorful.

Take the soaked beef out of the control-dried soup, cool it in the cold and slice it for consumption.
Tips:
1. To make sauce beef, you must first choose the meat. Beef tendon meat is the first choice. It is actually best if you can buy tendon heart (money key). Soaking the purchased beef with clean water in advance can better remove the blood in the beef, so as to avoid prolonged blanching and reduce the meat flavor
2. To use old soup, meat marinated in old soup tastes more mellow. After each use, the old soup can be left to cool, put it in an airtight box or a fresh-keeping bag, and keep it frozen. Take it out before use and add various seasonings and water.
3. The degree of softness of beef stew is suitable for the chopsticks to penetrate smoothly with slight resistance. The taste is not tenacious after passing, and the teeth cannot be bitten if it is short.
