Sauce Fried Duck Shreds
1.
Prepare ingredients: duck breast: 500g, white pepper: appropriate amount, cooking wine: appropriate amount, salt: appropriate amount, egg: 1 piece, sweet noodle sauce: 5 spoons, soy sauce: 2 spoons, tomato sauce: 2 spoons, sugar: 10g. Soak the cleaned duck breast in cold water for about 20 minutes to remove blood and fishy odors.
2.
Prepare ingredients: cucumber: appropriate amount, green onion: appropriate amount, ginger: appropriate amount.
3.
Use some green onions and ginger to cut into shreds and soak in water.
4.
After the duck breast is dried to control the moisture, remove the fascia, shred, add a little salt, white pepper, and marinate in cooking wine for the bottom taste.
5.
Mix with a bowl of juice. 5 tablespoons of sweet noodle sauce, 2 tablespoons of tomato sauce (the addition of tomato sauce can make the finished product color red and not black, and has the purpose of enhancing flavor), soy sauce: 2 tablespoons, sugar: 10g, salt: a little (due to marinating shredded pork We have added salt for the bottom taste, and the sweet noodle sauce also has saltiness, so the amount of salt added at this time is appropriately reduced)
6.
After all the preparations are done, add an egg and an appropriate amount of dried starch to the pre-marinated shredded pork.
7.
Pour oil in the pan, add 50% heat and stir-fry the silky meat. Don't rush to stir-fry after the shredded pork is in the pan. The pulp to be hung is fixed a little, and then turned, so that it will not be desizing. The shredded pork is fried until it turns white, indicating that it is at least eight mature. Remove the oil control for later use.
8.
Pour a little bottom oil into the pan, pour the oil into a bowl of juice, then pour in an appropriate amount of green onion and ginger water, bring to a boil on medium heat, turn to low heat, and stir constantly with a spatula to prevent the pan from getting stuck.
9.
When the sauce becomes viscous, pour in the shredded pork, stir fry quickly until the sauce evenly coats the shredded pork, pour a small amount of water and starch to thicken. After turning off the heat, pour in sesame oil, or sprinkle a little white sesame seeds for decoration.
