Sauerkraut Beef
1.
After the sauerkraut is rinsed, cut into small sections and soak in clean water for about 20 minutes (add a teaspoon of salt to the clean water), rinse again, and then squeeze the water dry by hand and set aside.
2.
Cut the beef into thin slices, add the light soy sauce, abalone juice, pepper, ginger juice, sesame oil, rice wine, and starch in the seasoning, mix well, marinate for a taste, about 20 minutes.
3.
Prepare the green onion, ginger, garlic, and red pepper.
4.
Pour the squeezed sauerkraut into an oil-free and water-free wok to dry the water and scoop it up.
5.
Pour a little oil in the wok, then pour in the sauerkraut with the dried water and a suitable amount of sugar, continue to stir fry for a fragrance, and shovel it up.
6.
Wash the wok, reheat it, pour in the oil and then pour the beef, turn it over and continue to fry after it is fragrant.
7.
Shovel and put it in the filter spoon while washing the wok.
8.
Add oil to the wok, add sliced ginger, green onion, garlic, and red pepper to fragrant.
9.
Pour the beef back into the pot and stir fry evenly.
10.
Pour in the sauerkraut and green onion, continue to stir fry for a while, pour in an appropriate amount of starch water, stir evenly and then serve.
