Sauerkraut Sausage

Turn the large intestine over and remove the fat, then use cornstarch, salt, and oil to knead it repeatedly until it is clean and free of odor. Add 2 pieces of scallion, ginger, cooking wine, and star anise in a pot under cold water for ten minutes.

After cooking, the boiled intestines are picked up with cold water, and then cut into pieces with dry water.

Cut the sauerkraut into small pieces.

Heat in a frying pan, stir-fry the sausages, add a little dark soy sauce to color.

Saute the fatty intestines and stir-fry with ginger and sauerkraut. Season soy sauce.
