Sauerkraut Tofu Fish

Prepare all materials. Wash the fish, sauerkraut, and tofu, cut the sauerkraut into strips, shred the ginger and red pickled peppers, and chop the green onions for later use. The fish is marinated with a small amount of salt and cooking wine.

Put the sauerkraut in the pot, let the water in the sauerkraut dry slightly, and set aside.

Put oil in the pot, cook with ginger, green onion, and garlic to get the fragrance.

Add the fish cubes and tofu and fry for a while (do not turn them too much to avoid breaking them). Add red pickled pepper, appropriate amount of oyster sauce, soy sauce, chili sauce, fermented bean curd and other seasonings.

Add the sautéed sauerkraut, pour in a proper amount of boiling water, boil on high heat, turn to medium-low heat and cook for 15 minutes, add a small amount of salt and chicken essence to taste.

Put it into a bowl and sprinkle with chopped green onion.
Tips:
1. The fish should be marinated first, so that the fish will be more tender and taste better.
2. The boiling water must be used for boiling fish. Cold water will shrink the fried fish meat and lock the umami taste.
3. The sauerkraut should be dried slightly first, so that it will be easier to taste.
