Sauerkraut Tripe

1 rice pepper, 10 pickled peppers, cut into sections, peeled and sliced ginger, put in a small bowl and set aside

Wash the soybean sprouts and put it aside, pour oil in the pot, then add ginger, then pour in the washed bean sprouts, stir fry for a while, add a teaspoon of salt, continue to fry until the bean sprouts become soft, turn off the heat and set a plate for later use .

Slice the tripe diagonally and put it in a plate for later use. Put a little water in the pot and boil, add a little ginger and a little cooking wine. Put the tripe on the plate in water and cook for two to three minutes.

Take out two pieces of sauerkraut, wash them two or three times, then squeeze the water and cut into sections. Normally, they are shredded. Our family likes to eat larger pieces, so I cut them into sections. The specific amount is based on each person’s taste. Put more.

After the ignition pot is heated, add edible oil and put a small handful of pepper to fry out the pepper oil, then remove the pepper grains.

Add the previously prepared rice chili and pickled ginger and stir fry for a fragrant flavor

Pour in the prepared sauerkraut and fry for two minutes

Then add the tripe and stir fry together, fry out the milky white juice, add two teaspoons of salt, and then pour some of the pickled pepper juice from the pickled pepper bottle into the pot. The sauerkraut tripe made in this way is more delicious.

Pour in the bean sprouts that have been fried beforehand and fry for another two or three minutes

Add two large bowls of cold water, the water should cover all the ingredients, then cover the pot and boil, turn it to a medium heat and simmer for about 15 minutes, adjust the flavor and add a little chicken essence to serve! Because sauerkraut itself has a salty taste, add salt according to your own taste. Don't add a lot of it at once. The more you cook the soup, the more delicious it will taste.

Put on a plate and garnish with chopped green onion, then you can serve it!
Tips:
The bean sprouts are delicious only if they have longer sprouts. Because my two children like to eat this dish, they make a larger portion. If there are few people in the family, just reduce the main ingredients appropriately!
