Sausage Claypot Rice

Soak the rice in cold water for 2 hours in advance. The soaking time cannot be too short or too long. The soaking time is too short. There is not enough water in the rice. If the soaking time is too long, the rice will be soaked too soft and not tasty!

A very important step in making claypot rice is to master the amount of water. If there is too little water, the rice will feel raw when eaten, and if there is too much water, the rice will be soft and not chewy. After soaking the rice, the amount of water is the height of your fingers. Just put your fingers parallel on the rice, and the water is parallel to your fingers. Put the lid on the casserole and put it on the fire to start simmering. The fire should be very low.

For the sliced sausage, I use Sichuan sausage. You can also choose wide sausage or Sichuan sausage according to your preference.

Prepare some green vegetables, which can be customized according to your own preferences. After the green vegetables are cleaned, they can be removed by boiling them softly. When boiling the vegetables, add 1 tablespoon of salt and 1 tablespoon of vegetable oil to the boiling water to make the vegetables taste better. Or you can stir-fry the vegetables.

Put the casserole on the fire, don’t leave it, pay attention to the movement in the casserole, at first you will hear the sound of pouting in the casserole and then you will smell the fragrance of rice. When you can't hear the sound of pouch, turn off the heat, open the lid, insert 4 small holes in the rice with chopsticks, pour a little vegetable oil into the small holes, and then move along the side of the pot to a circle of vegetable oil. If you don't pour the oil, the rice is easy to stick. Don't use too much oil, too much oil is more greasy.

Then spread the sausage on the rice, close the lid, and continue to simmer for about 8 minutes. The fire is so small that it will not go out automatically. Listen carefully at this time, there will be a very subtle crackling sound in the casserole, this is the sound of the formation of the crust.

Use 3 spoons of light soy sauce, 1 spoon of oil, 1 spoon of abalone juice, 1 spoon of chili oil, 1 spoon of sesame oil, and half a spoon of sugar to make a bowl of sauce. The amount of chili oil can be increased or decreased according to your preferences.

The simmered rice is topped with green vegetables and small cut tomatoes, and the sauce is poured on it, not to mention it's fragrant! I added a few sliced peppers purely for decoration. You don't need to add it. Little tomatoes are very tasty!
