Scallion Abalone

Clean the abalone, cut the scallion white, cut the scallion tail into pieces, and slice the ginger for use;

Bring the water to a boil, pour the abalone, add ginger slices and cooking wine, blanch the water for 20 seconds to remove the fishy, then remove it for use;

Heat the oil, pour the white onion, and boil the scallion oil;

After the scallion is turned into yellow, remove the scallion and boil the scallion oil;

Pour the abalone into the pot, add oyster sauce, soy sauce, and salt to fry;
7.
When it's almost ripe, sprinkle with chopped green onion.

Tips:
1. How to treat live abalone: Insert a knife between the shell and the meat, and turn the meat around the edge of the shell to come down. If not, you can ask the seller to help deal with it when buying;
2. Cleaning method: Wash away the black juice and carefully clean the wrinkles on the side with an old toothbrush.
3. The whole cooking process should not take too long, otherwise the taste of the abalone will become old
