Scallion Chicken

Wash half of the chicken and steam it in a pot with water for 15 minutes. After steaming, pour out the chicken juice, massage the chicken with salt while it is hot to make it taste better, and then put it in the refrigerator.

Clean the shallots, smash them, and slice them for later use.

The chicken that has been refrigerated for half an hour is taken out and chopped for serving.

Stir the chopped shallots in a pan with hot oil to get a fragrant flavor, add a little salt (since the chicken is covered with salt, only the shallot oil is flavorful), and pour it on the surface of the chicken after cooking.
