Scallion Chicken
1.
The chicken is clean.
2.
Boil a pot of water, put the chicken in it, and remove the blood.
3.
Put the chicken in the soup pot and add water to cover the chicken. Put two slices of ginger and green onion knot.
4.
After the high heat is boiled, cook for 10 minutes, turn over and cook for 5 minutes, then turn over and cook for 5 minutes. Turn off the heat and simmer for 10 minutes.
5.
Put the cooked chicken in cold water with the skin facing down.
6.
Turn over after cooling until it is completely cooled.
7.
While the chicken is cooling, start making scallion oil. The white onion and the leaves of the chives are separated.
8.
Put oil in a pot, turn a low heat, and let the light white.
9.
The scallion starts to zoom, and some of the finer scallions are burnt under the leaves of the scallions, so you must remove them in time, otherwise there will be a burnt smell in the oil, which will affect the taste.
10.
When the green onion leaves start to zoom, turn off the heat and remove the green onion segments.
11.
Put the scallion oil out of the pot and put it into a bowl.
12.
Take an appropriate amount of scallion oil and boiled chicken broth, and mix in a ratio of 1:1.
13.
Wash the wok, dry it, put it on the stove and dry it on a low fire, don't put oil, put in an appropriate amount of salt, the amount of salt should be determined according to the size of the chicken.
14.
Fry the salt dry.
15.
Pour the scallion oil juice blended in step 12 and cook until the salt is completely melted.
16.
This is the soup that will finally be poured on the chicken! Look, just out of the pot, it's fragrant and warm!
17.
The chicken that is a little cold has been completely cooled, remove and cut into pieces, sprinkle with some chopped green onions.
18.
Pour the chives juice just out of the pot and it's OK!
Tips:
You can make more scallion oil at a time, and you can use it later. Don't just pour in the scallion oil after boiling it. If you are the one that makes as much as you need, it depends on the size of the chicken to determine the amount of oil.
