Scallion Mustard

Remove the old skin from the roots of Ercai, wash them together with the leaves, and cut them into thin slices. Add salt to pickle.

Chop the shallots and shred the red peppers.

Pour the oil in the wok, add the shallots after warming up, and fry until fragrant.

Rinse the marinated vegetables twice with pure water, squeeze out the water, put them in a bowl, and put red pepper shreds.

Add light soy sauce and sugar, mix well, and pour the fried shallot oil on top.

Mix well enough. Just install it.
Tips:
Recently, I have eaten cold dishes. The seasoning is relatively simple. Either use some kind of oil or simply use light soy sauce. You can add seasonings to your liking. Personally think that the taste should not be too strong to avoid losing the sweetness of the dishes.
When frying the shallot oil, add some shallots or chopped onions, it tastes better. I don't have any at home, I only use small shallots.
