Tips:
1. The lard must be warmed up and then fried with shallots on low heat, otherwise the oil temperature is too high, the shallots will be fried all at once, and the oil will become bitter and not tasty
2. If you don't like lard, you can change it to vegetable oil. However, the noodles boiled with lard and scallion oil taste the best
