Scallion Noodles

1. Right amount of pig fat

2. Pour into the pot, add a small amount of water, and boil on low heat

3. Slowly the water evaporates and the grease precipitates

4. Remove the oil residue when the oil residue is slightly yellow

5. Let the remaining lard dry for a while and let the oil warm up

6. Wash the chives and cut diagonally into sections

7. Put it in the warm lard and fry slowly

8. To dry yellow onion

9. Remove the fried shallots, and the shallot oil is ready

10. Prepare ryuk noodles or other noodles

11. Cook in the pot

12. Prepare the sauce when cooking the noodles, add light soy sauce, vinegar, sugar, and salt to the noodle bowl

13. Pour the cooked noodles directly into the noodle bowl

14. Add 2 tablespoons of scallion oil

15. Mix well

16. Finally, add the fried shallots and eat it while it is hot.

Tips:

1. The lard must be warmed up and then fried with shallots on low heat, otherwise the oil temperature is too high, the shallots will be fried all at once, and the oil will become bitter and not tasty
2. If you don't like lard, you can change it to vegetable oil. However, the noodles boiled with lard and scallion oil taste the best
