The scallops that my friend sent from Dalian are big and great. They are used to make a spinach soup and fresh.

Scallop Diced Spinach Soup

1. Defrost the scallops, add cooking wine and marinate for 15 minutes

2. Wash the spinach

3. The vermicelli is soaked in warm water and boiled in a pot

4. Add eryngii mushrooms and scallops

5. Add spinach root and cook for a minute

6. Season with salt

7. Finally add spinach leaves and boil
