This is grown in our own factory, and then pickled. It is usually used to mix three raws or stir-fried like this, and it is not just to make eight-treasure pickles.

Pickles contain nitrite, which is the reason why pickles discourage many people. The content of nitrite in pickles is not high in the first 2 days of pickling, but only on the 3rd to 8th days the nitrite content reaches its peak on the 9th day. It began to decline later, and basically disappeared after 20 days

So pickling pickles generally takes a short period of time within 2 days and can be eaten only after one month of pickling.

After the pickles are made into pickles, they can be boiled for 2 minutes or 30 minutes in the sun or washed with hot water before eating, which can remove the nitrite remaining in the pickles to a certain extent."

Scrambled Eggs with Pickles.

1. Prepare a pickle lump.

2. Wash the pickles and shred them, soak them in water to remove their saltiness.

3. Chopped green onions.

4. Cut ginger into thin strips.

5. Cut red pepper into small circles.

6. Wash coriander and cut into small pieces.

7. Scatter the eggs and set aside.

8. After the oil is hot, add star anise, saute ginger, green onion and red pepper in turn.

9. Pour shredded pickles and stir fry over high heat.

10. Add chicken essence and sugar to taste.

11. Pour the egg liquid in a circular motion.

12. Stir-fry for a while and sprinkle with coriander.

Tips:

The pickles should be soaked in water once more after shredded, otherwise it will be too salty.



You can also stir-fry with shredded pork, adding pepper will make it more flavorful.
