The fragrance of Sophora japonica in April, the first time I saw Sophora japonica sold in the market, I bought some back. I like the faint fragrance of Sophora japonica. It is delicious when paired with eggs.

Scrambled Eggs with Sophora Japonica

1. Pick the Sophora japonica and set aside

2. Soak Sophora japonica flowers in salt water for more than ten minutes, wash and set aside

3. Bring water to a boil in a pot, add Sophora japonica to boil for ten seconds to remove

4. Sophora japonica too cold water

5. Squeeze the water and add three eggs

6. A pinch of salt to taste

7. Put oil in the pot, pour in Sophora japonica egg mixture and fry until it is formed
