Scrambled Eggs with Spinach Stem

Wash 1 spinach stalk (the leaves are used for juice and noodles)

Boil the water in a pot, add some salt, and blanch the spinach stalks

Blanched spinach stalks in cold water

Prepare an egg (I used a double yolk egg), spinach stalks dried, and carrots peeled

Cut spinach stalks into sections, and shred carrots
6.
Beaten eggs, double yellow
7.
Put the egg mixture into the frying pan and spread it out and set it aside.

Add a little oil to the pan, sauté the chopped green onion, and stir-fry the carrot
9.
Stir-fry spinach stalks
10.
Add the scrambled eggs and stir fry a few times
11.
Season with salt
12.
Stir evenly out of the pot.
