Scrambled Eggs with Spinach Stem

Wash spinach stalks and cut into inch pieces.

Blanch it with boiling water to control the moisture and set aside. Beat the eggs in a bowl and prepare some chopped green onions.

Fill the pot with oil and heat, fry the eggs, cut out small pieces and serve for later use.

Fry the chopped green onion with the remaining oil of the scrambled eggs.

Add spinach stalks and stir fry.

Add salt and pepper and stir well.

Add the scrambled eggs, stir fry evenly and turn off the heat.

Finished product.
