Seaweed and Winter Melon Pork Ribs Soup
1.
Let the store chop the ribs. Cut the kelp into sections, wash the wax gourd, and cut into thick pieces with the skin (cut into thick pieces and resistant to cooking, if you cut into thin slices, you won’t be able to put them in the pot at the end); pour enough water into the pot and add the ribs
2.
After the high heat is boiled, pour the cooking wine, boil it again and simmer for 3-5 minutes until the wine taste is gone; remove the ribs, clean them, put them in the pot, and pour in enough water
3.
After the water boils, add sliced ginger, green onion, star anise, kelp and winter melon
4.
After boiling again, skim off the foam, turn to low heat, cover the pot, and simmer for 1 hour; open the lid, skim off the surface oil, add salt, and cook for another 20 minutes
