Regarding the difference between carob and cowpea, in the South, this long bean with seeds inside is called "cowpea", but in the north it is called "corn beans" and some are called "corn beans". The same vegetable is called differently because of the region, but it is still it.

When I was young, I liked to pick a few long tender beans in the vegetable garden in summer, and then pinch some tender green onion leaves to eat raw. The astringent fragrance is mixed with the spicy green onion leaves, which has a very rustic taste.

There are too many ways to eat carob. In the north, the old beans with big grains and loose skin are used to use fat and lean pork, put a few red peppers and stew in a pot, wait for the beans to stew soft and rotten. Afterwards, each person served a bowl of steamed buns or pancakes, and huffed a bowl to relieve hunger.

Tender beans can be used for cooling, pickling capers, or boiled and dried to make dried carobs for stewing pork belly in winter..."

Tips:

1. The raw carob contains a saponin, which has hemolytic and toxic effects on the nervous system. Therefore, the beans cannot be eaten raw, they must be heated and cooked, and the saponin can be eaten only after the saponin is completely destroyed.

2. Add a small amount of oil to the water to make the beans green.
