Sesame Carrot Shreds

Ingredients: radish, ginger, dried chili, pepper, sesame.

Wash the radishes and cut them into filaments. After cutting, put them in a clean pan and chill for a while; shred the ginger; cut the chili into small pieces for later use.

Heat the pan with cold oil, add shredded ginger, chili, pepper, and stir fry until fragrant.

Remove the oil residue, leaving only the pepper oil.

Stir-fry raw sesame seeds. You can make more of them at a time. Stir-fried sesame seeds can be stored in a clean airtight container. It is more convenient when you eat them.

If the iced radish has water, pour out the water. Put the prepared shredded radish into the plate and pour the pepper oil.

Add vinegar. Aged vinegar, white vinegar, rice vinegar, fruit vinegar are all fine, and each vinegar has a different taste. White vinegar is lighter, mature vinegar is more fragrant, and fruit vinegar is sweet and sour. Feel free to put it according to personal taste.

If you don't like the spiciness of the radish itself, you can add some sugar to increase the spiciness, and there will be no spiciness.

Finally, add steamed fish drum oil, sprinkle some cooked sesame seeds, and stir well with proper amount of salt.
Tips:
Pepper oil, you can make more spare parts at a time, it is a must for cold dishes in the hot summer.
Similarly, chili oil and shrimp oil can be used to mix cold dishes.
