There is an old-fashioned pastry shop in Chengdu, named after the crisp. In front of his house, there seems to be a long line forever. Peach crisp is a classic forever.
It is said that the most traditional peach cakes use lard and stinky powder. The smelly powder can produce more gas, so the peach crisp is so crisp and melts in the mouth. I always wanted to get some stinky powder, but the amount of it was too small and too infrequent, so I had to give up in the end. Many versions have used baking powder instead of stinky powder, but that was the case.
I found an old peach crisp recipe, and made some changes with reference to some fashionable versions. Replace one-third of the vegetable oil with lard, and combine baking soda with baking powder. I wonder if it can have the effect of lining up peach crisps. I randomly added black and white sesame seeds, which seems to be more. After more than 20 minutes, the light golden color came out of the oven. I wondered how did the dark brown lined up with peach crisps come from?
It's crisp, but compared to queuing peach crisps, it still feels a little worse. . . .

Sesame Peach Crisp

1. Ingredients: 100 grams of flour, 45 grams of sugar, 30 grams of corn oil, 15 grams of lard, 20 grams of eggs, 0.5 grams of baking soda, 1.5 grams of baking powder, 15 grams of black and white sesame seeds

10. Divide into 10 equal parts.

11. Make a round cake with a diameter of about 5-6 cm and press a small hole in the middle.

Tips:

Black and white sesame seeds can be replaced with other nuts.
The amount of sugar can be increased or decreased according to your own taste.
The baking time and firepower need to be adjusted according to the actual situation of the oven.
