Sesame Scallion Bread

Prepare all the ingredients.

Put 200g of high-gluten flour, 15g of caster sugar, 3g of salt, and 10g of milk powder into the mixing bucket.

Dissolve 3g of yeast powder with a little water, pour it into the flour, then add 20g of egg liquid and 15g of salad oil.

Then pour 100ml of water. The amount of water should be adjusted according to the hygroscopicity of the flour, first set aside about 15g, and finally decide whether to add it according to the state of the dough.

First use chopsticks to manually stir all the ingredients into a flocculent dough without dry flour. The main reason is to avoid the flour splashing out after starting the machine.

Start the kneading program of the chef's machine and knead the dough until it can pull out a transparent and non-breakable film.

Round the dough again, with a smooth surface, and put it in a suitable container.

Cover with plastic wrap or a damp cloth, put it in the steaming oven, and close the oven door tightly.

Select the "fermentation" mode, set the temperature to 35 degrees, and the time for 1 hour.

Prove the dough to double its size. Fermentation does not depend on the time, but the state of the dough. Dip a little flour with your finger and insert it into the bottom of the dough. After you take out your finger, the dough does not shrink or collapse, indicating that the fermentation is complete.

Pour out the fermented dough and press gently to expel the air in the dough.

Divide the dough into 6 equal parts. After rounding, cover with plastic wrap and let it rest for about 20 minutes.

When you relax the dough, you can prepare the chopped green onion filling. Clean the shallots and drain the water, cut into chopped green onions, put them in a bowl, add egg liquid, oil, salt, and pepper, stir well and set aside.

After the dough is relaxed, use a brush to brush a thin layer of whole egg liquid on the surface.

Gently pick up a dough, turn it over and put it in a deep dish with white sesame seeds, so that the surface of the dough is covered with white sesame seeds.

Place them in a baking tray lined with greased paper, leaving room for fermentation between each dough.

Use a rolling pin to press down from the center of the dough and press it straight into the bottom.

After the rolling pin is taken down, a deep nest will appear in the middle of the dough, and an appropriate amount of chopped green onion filling will appear in the dough.

Put the baking tray in the steaming oven. Select the "fermentation" mode, set the temperature to 35 degrees, and the time for 45 minutes.

After fermentation, take it out and preheat the oven at 200 degrees. After the preheating is completed, put the baking tray in the oven, select the "up and down baking" mode, set the temperature to 180 degrees, and time for 15 minutes, and the surface will be golden.
Tips:
1. In winter, the room temperature is low and fermentation is difficult. You can use the fermentation function of the steamer.
