Shanghai Pao Fan is very popular in Jiangsu, Zhejiang and Shanghai. Some children eat dim sum for breakfast, and some also eat rice, because they like a few dishes, such as fermented bean curd, peanut butter, and salted eggs. Rotating meals with rice is different every day. The biggest feature of pao rice, fast! Shanghai Pao Fan can be done in two minutes, and the preparation work will not exceed five minutes. It can be refurbished by just changing the dishes.
In the past, we used to cook rice in the tiger stove, but now there is no briquettes stove. There is gas in the house, so the tiger stove (which was a feature of Shanghai in the past, it was a place where water was boiled, and its business scope was soaking water, teahouses, and bathhouses) is gone. But the tradition of eating pao rice is still there. Some restaurants also sell it, but not on the general recipes. Some regular customers still have it (not available to regular customers, as long as the owner is a local, they have it). Most of the supply is vegetable pickled rice. A large bowl, the guests use a small bowl to serve some by themselves.
