Shanxi Pancakes (green Onion)

Ingredients: 500 grams of flour, shallots (about an inch long), cut into chopped green onions, beat two eggs

Preparation: Add eggs to the flour, then gradually add cold water, stirring while adding water, until the flour becomes a thick paste. Add chopped green onion, salt, and five-spice powder to it, and mix well.

Finally: add a little oil to the pan. After heating, use a spoon to scoop the batter into the pan—even thickness and regular shape. Warm fire. Turn over and fry the other side after it changes color on one side. It takes about two minutes or so.
Tips:
1. The thickness of the batter is adjusted according to personal taste, and the elderly and children can be slightly thinner when eating, it is easy to chew and digest;
2. When preparing the batter, stir while adding water. Do not add too much water too fast, otherwise dry dough may appear;
3. You can also add zucchini or diced cucumber to the batter.
