Shaqima
1.
2 eggs
2.
Beat with an electric whisk until the egg is foamed and the volume expands
3.
Add sifted flour
4.
Knead it into a dough for half an hour
5.
After soaking the raisins in water, use kitchen paper to absorb the moisture for later use
6.
Roll out the good dough into a dough sheet with a width of about 15 cm and a thickness of about 0.3 cm
7.
Divide it into two, apply starch on the surface to prevent sticking, and then stack the two dough pieces
8.
Cut into strips less than 0.5 cm
9.
Add some starch to prevent sticking and shaking
10.
Cut noodles when the oil temperature is 50% hot
11.
Fry until the noodles rise and turn slightly yellow, then remove. Don't blow it for long
12.
Add the right amount of water to the pot, and add the right amount of sugar. I didn’t weigh it specifically. I guessed it is about half a small bowl. Add 1 tablespoon of maltose.
13.
Initially, after the sugar melts, the syrup bubbles up
14.
Continue to boil on a low heat. After the water evaporates, the syrup will become slightly thicker and the color will become light brown.
15.
Pour in the fried noodles and raisins
16.
Mix quickly and evenly
17.
Transfer to a greased baking tray or other container, press while it is still hot, and form into shape
18.
Let cool and cut into four squares
19.
Finished product
Tips:
Mix the noodles after the eggs are bubbling. The finished product will be very soft, so there is no need to add baking powder.
