Shaving Jelly

100g pea flour+100ml cold water, stir evenly into water starch, peel and mince garlic cloves for later use

Add 600ml of water to the pot to boil, pour in water starch, stir quickly with chopsticks, turn off the heat when it starts to bubble, and pour into a clean bowl

Let stand to cool, after it has completely condensed (more than 2 hours on hot days), buckle upside down on the plate

Tahini sauce + a little warm water and stir until smooth, add minced garlic, light soy sauce, salt, sugar, balsamic vinegar, and spicy oil and stir well
5.
Wash and shred cucumber
6.
Scrape the jelly powder into strips with a scraper
7.
Serve on a plate, drizzle with sauce, sprinkle with peanuts and coriander.
