Shaxian noodles are a kind of Shaxian snacks. They are usually paired with Shaxian flat meat to make a meal. It has the characteristics of strong fragrance, fresh color, simple raw materials, and easy-to-master cooking methods. The difference between Shaxian noodles and Wuhan hot dry noodles is that Shaxian noodles do not put sesame sauce but peanut butter. It has one less process of mixing oil than hot dried noodles. So Shaxian mixed noodles must be mixed well immediately after they are cooked, otherwise they will stick together. Another difference from the hot dry noodles is that the Shaxian noodles use white pepper, and the hot dry noodles prefer black pepper. Shaxian noodles must be eaten with authentic Shaxian chili sauce. The prepared Shaxian noodles have a strong fragrance, fresh color, salty and sweet taste, and oily but not greasy.
