Tips:
1. The most important spice for making sheep scorpion is ginger, which can turn the fishy smell of mutton into a mellow, so you must remember to put it.
2. Sheep scorpion is the backbone of sheep. It is usually sold in large vegetable markets where beef and mutton are sold. There are two types: ordinary sheep scorpion and meat scorpion. The meat scorpion needs to be booked one day in advance. There is more meat and the price is slightly more expensive. Ordinary scorpions are relatively cheap. I personally think that ordinary scorpions are better when stewed.
3. When buying sheep scorpion, please let the seller help to chop it into small pieces. The thin sliced knife of my own kind cannot help, certainly not able to accomplish this important task.
