Shortbread

Raw materials: flour, corn oil, yeast powder, low-gluten flour, white sugar.

Raw materials for skin decoration: eggs, black sesame seeds.

Mix the yeast powder with a little water.

I use 120 grams of high-gluten flour and 30 grams of cornstarch to mix into a medium-gluten flour, add water, add corn oil and yeast water, and knead it into a water-oil dough after mixing.

Cover with plastic wrap for 5 minutes.

Add corn oil to the low-gluten flour and knead it by hand to form a dough (you can knead it on the panel for more convenience).

This is oil dough.

Roll out a large rectangular piece of water and oil noodles, press the oily dough into a small rectangle and spread it on the water and oil surface, then fold it in half and knead the edges tightly.

First, gently press the dough with your hands, then use a rolling pin to slowly roll it out from the middle to the sides, and then fold the two sides to the middle like a quilt, and then fold it again.

Roll out into larger rectangular or oval dough pieces.

Slowly roll up the dough sheet from top to bottom to form a strip.

Divide the dough into equal parts.

Take out a small pasta, squeeze it, and fold the exposed crisps at both ends toward the middle.

After the dough becomes round, gently squeeze it with your hands. Make the remaining small noodles in turn.

Brush the egg white liquid on the shortbread dough, glue it with black sesame seeds, and let it rest for a few minutes before baking. Preheat the upper and lower heat of the oven to 200 degrees. After preheating, put the shortbread dough into the oven for 18 minutes. After the shortbread is evenly golden brown, turn off the heat and let it cool before serving.

Tips:
If you have all-purpose flour, you can directly use all-purpose flour in the water and oil noodles. When kneading the water-oil noodles and the oil noodles, be sure to mix them evenly, knead them thoroughly, and melt all the oil into the flour. I directly use white sugar for the oil noodles, or powdered sugar. The amount of white sugar is just a little sweet. If you like to eat sweet, you can increase the amount of white sugar.
