Shredded Chicken Enoki Mushroom

Ingredients: chicken thigh meat, green onion ginger, pepper, dried chili (Khan, the habit of selling chicken thighs helped me chop it into small pieces).

A small handful of enoki mushrooms.

Bring a pot of water to a boil and blanch the enoki mushrooms.

Place enoki mushrooms in cold water to let cool and drain the water.

Boil the chicken thighs with ginger and cooking wine for 7 to 8 minutes.

The blanched chicken thighs are placed in cold water to cool, and then torn into small pieces.

Pour oil in a hot pan, saute garlic, pepper, and dried chili.

Heat oil to cool, strain out garlic, pepper and dried chili, pour on shredded chicken and enoki mushroom, add chopped green onion, light soy sauce, sesame oil and pepper, and mix well.
