Shrimp and Tofu Pot

1. Shrimp head, shell, and prawn thread, add cooking wine and pepper to marinate for a while

2. Use a cross knife on the top of the tomatoes, soak them in boiling water for a few minutes, peel them, and cut into fine dices

3. Cut Japanese tofu in half and cut into small pieces

4. Stick a layer of cornstarch, increase the oil temperature, and fry until golden and crispy on both sides

5. Heat oil in a pot, add green onion, ginger, garlic, add shrimp head and fry out shrimp oil, add tomatoes and fry out sand

6. Add 1 tablespoon of tomato sauce, 1 tablespoon of oyster sauce and stir-fry, add appropriate amount of water to boil, remove the shrimp heads

7. Add enoki mushrooms, onions, tofu, shrimps, add appropriate amount of salt, cover and simmer for about 5 minutes, sprinkle appropriate amount of chopped green onion before serving
