Steamed egg: A home-cooked dish suitable for all ages. Southerners like to call it "steamed egg", and northerners call it "egg 羮".

A delicacy that tastes better than tofu, but has a more aroma than tofu. It is matched with different ingredients to add a different flavor."

[shrimp and Water Slide Egg]

1. Beat the eggs into the bowl and beat them up

2. Add refined salt, mix well, add cold water to break the bubbles

3. Keep beating in one direction until the egg liquid becomes smooth

4. Filter to remove surface bubbles (or sieve twice with a small sieve) and let stand for 5 minutes

5. Pour into the container, steam in the pot on medium heat for 3 minutes, sprinkle shrimp on the surface, continue to steam for 4 minutes, turn off the heat (the time needs to be adjusted according to the amount of production)

6. Sprinkle chopped green onion and cover for a while, wait until the green onions are half-cooked, drizzle a little cooked oil and light soy sauce

Tips:

A: Cold water should be used for the water that is mixed with the egg liquid. The water egg steamed by cold water will not get lumps, and the hot water will easily wash the egg liquid

B: Add some water starch to the egg liquid to make the steamed water egg more tender

C: The dried shrimp can be replaced with fresh shrimp, ham, preserved eggs, etc., which are equally delicious

D: After steaming for a while, then sprinkle the dried shrimp, because the surface of the steamed egg starts to solidify, so the dried shrimp will not sink when it is sprinkled on it.
