Shrimp Balls with Mashed Potatoes

Remove the prawns from the head and mud line to remove the prawn meat, and reserve the tails for later use.

Chop the fresh shrimp on the chopping board

Wash the potatoes, put them in a microwave oven, cover with plastic wrap that can be used in microwave ovens, and turn for about 8 minutes; take them out, peel them, and press them into mashed potatoes; (the potatoes can also be made into mashed potatoes by other methods)

Add shrimp paste and potato mash, add a little salt, and stir well.

With wet hands, take an appropriate amount of potato and shrimp mash and knead into small balls, and then insert the tail of the shrimp into the kneaded potato and shrimp ball.

Then evenly dip the outside of the potato shrimp ball with flour, beaten egg liquid, and then evenly coat a layer of breadcrumbs.

Tips:
Don't throw away the shrimp tails when removing the shrimp heads and your dislikes.
