Shrimp Fried Eel Noodles

The live large river prawns are peeled off the shrimps, and then washed repeatedly with water until the shrimps turn white.

Drain the shrimps and absorb the moisture with kitchen paper.

Clean the eel, wash and cut into sections, and drain the water.

Put an appropriate amount of lemon juice, salt and egg white in the shrimp, knead and sizing, then put an appropriate amount of starch to knead and marinate for 30 minutes.

Cut the ginger, onion, and green pepper into shreds, and smash the garlic.

Heat the pan to release the oil, pour the marinated shrimps into the pan and quickly remove the oil.
