Shrimp Wontons

After buying the shrimp, remove the shell and thread.

Chop it with the back of a knife after cleaning.

Put 1 egg white, cooking wine, black pepper powder and a little salt in the shrimp meat, add 1 teaspoon of starch, stir in a clockwise direction and stir evenly.

Take a small wonton wrapper and put shrimp meat on it. Don't put too much stuffing in the small wonton wrapper, because the wrapper is thin and the cooking time is short. If there is too much stuffing, it will not be cooked properly.

After wrapping the filling, lift the four corners to the middle, and then gently pinch it. After wrapping all the stuffing, place it on the plate.

Pour the right amount of water into the pot, the amount of water can be determined according to the amount of wontons.

After boiling, put in the wrapped small wontons, scatter them lightly with a spoon, and wait to boil again, the small wonton skins are transparent, and the heat can be turned off.

Then scoop the small wontons into the prepared soup bowl and sprinkle with chopped green onions.
Tips:
1. Because the skins of small wontons and large wontons are different, they are very thin, and they are fast-cooked, so don't put too much filling, otherwise, the skin will be mushy and the filling will not be cooked yet.
2. The soup can be either clear soup or stock broth such as chicken broth, depending on personal preference.
